How to Store Fresh Caught Blackfin Tuna

      Fill the ice chest with ice prior to going fishing.

      Kill the fish immediately after catching it with an iki stick to the brain or a swift club hit between the eyes.

      Place the fish in the ice chest filled with ice immediately after killing it. You want to keep the fish as cold as possible to stall the decomposition process.

      Dress the fish as soon as you get home. Slit the fish's stomach from tail to head and remove the entrails and gills. Wash the fish with cold water after you have removed the gills and entrails.

      Fill the stomach and gill cavities with ice and place the fish back on ice. If you are storing the fish in the freezer, wrap the fish in a layer of plastic wrap, followed by a layer of freezer wrap and place the fish in the freezer. Fish can stay frozen in the freezer for up to six months.
