How to Keep Potatoes Firm Before Frying

A starchy vegetable, the potato provides a wide range of meals with a side dish that can be served several ways. Aside from baking, boiling, mashing and roasting, you can fry potatoes, but fresh firm potatoes are best for this endeavor. Keeping potatoes fresh and firm before frying isn't difficult and it keeps them from turning gray and going bad.

  • Sharp knife
  • 2 -qt. bowl
  • 1/4 tsp. vinegar
  • Aluminum foil

      Peel the potatoes if you want skinless fried potatoes, otherwise, slice them into fries or slices.

      Fill the bowl halfway with cold water. Add the vinegar to the bowl. The vinegar keeps the water clean and acidic which helps keep the contents of the bowl sterile and crisp. You can also use lemon juice instead of vinegar.

      Add the sliced potatoes to the bowl. Cover the bowl with aluminum foil if it doesn't have its own lid.

      Place the bowl into your refrigerator. Sliced potatoes can last up to two days in this manner.

      Drain the water from the bowl and pat dry the potatoes with paper towels immediately before frying them.
