How to Work the Smoker on Professional Char-Griller & Smoker
Professional Char-Griller brand grills and smokers feature cast iron construction and adjustable grates. You control the temperature by adjusting the grates, and you can lift them to add more coals while cooking. The Smokin' Pro model features a side fire box for smoking. Working the smoker is relatively simple, once you get the hang of it.

Curing the Grill

Heat the grates to 300 degrees Fahrenheit for 30 minutes.

Coat the grills, grates and inside of the barrel with vegetable oil.

Place enough coals within the fire grate to create a medium size fire.

Spread out the coals after they ash over. Replace the cooking grate.

Close the lid. Reduce the heat to 200 degrees for two hours.
Firing the Grill

Place 40 to 50 coals in a pyramid, and douse them with lighter fluid.

Light the coals in several places.

Spread them out and start cooking once they begin to ash over.
Working the Smoker

Add water to the water pan. Place coals in the tray of the side saddle smoker.

Place your choice of wood chips into the side saddle smoker.

Close the smoker.
