1
Place the sharpening stone flat on a table.
-
2
Lay the blade flat along the stone at a 45 degree angle.
-
3
Firmly hold the knife by the handle. Your index finger should rest along the back of the blade.
-
4
Raise the blade 20 degrees off the surface of the stone.
-
5
While maintaining contact between the edge of the blade and the stone, firmly draw the knife towards you from hilt to point. Apply a slight amount of pressure from above. Take care to maintain the 45 degree and the 20 degree angles.
-
6
Turn the knife over and repeat the process while maintaining the same angles on both sides of the blade. Slowly alternate strokes on the stone. Each side of the blade should be stroked several times, and many times if the knife is dull.
