Queen or King of the Court

Split players into teams of three. Pick two teams to begin playing by regular volleyball rules. Rather than having each team serve, however, toss a ball into the court every time a point is won. The team that wins the point stays on the court, while the team who loses rotates out with the third team. Set a time limit, and continue this rotation until time is up. The team with the most points is the winner. Have the winning team pick some form of drill or punishment for the rest of the players to do (like running laps, doing push-ups and so on).
The Chase Game

Split the team into two separate groups. Set up cones in a square if outside, or if practice is being held in a gym, use the outer basketball boundary as a border for the players to follow. Have one team stand at one corner of the boundary and have the other team stand at the opposite corner. Players should line up on the inside, parallel to the boundary.
Say "go" and have the first player in each line run in the same direction (both teams will either run clockwise or counterclockwise). As soon as the player runs past the next player in line, the second player in line is allowed to run. Continue down the line--players may have to repeat their running if necessary. Have players encourage their teammates as they're running.
The object of the drill is to have each player run around the boundaries and back to her line. Each team is trying to catch the other, and the team that catches the other team first wins.
The Serving Game

Split the team into two groups. Have each group stand on opposite sides of the court. Set up cones on each side that are equally spaced apart. Place as many cones as you want per side. Have players serve the ball, aiming to knock the cones over on the opposite side. One player serves at a time. Encourage your players to cheer the server on. A team wins when all the cones on the other side have been knocked over.
